Easter Chocolate Fudge Cake


250 gm unsalted butter

300gm 70 % bitter sweet chocolate

2 tablespoon cocoa

1/2 cup milk

6 eggs

1 teaspoon vanilla paste

Pinch sea salt

1 cup caster sugar

1/2 cup brown sugar

1 1/2 cup plain flour


Preheat oven 160°C.


Place chopped butter and chocolate into a small saucepan over low heat, and carefully melt while stirring constantly.

Sift in cocoa powder and add the milk, stir until smooth. Set aside to cool.


Place the eggs, sugars, sea salt and vanilla in the bowl of an electric mixer and whisk together until light and fluffy.

Add the cooled chocolate mixture to the eggs and mix until just combine.

Remove from stand mixer and fold the sifted flour into chocolate mixture, working until it is just combined.


Pour into a prepared cake tin and bake in preheated oven for 45 minutes or until just cooked.

Remember this is a fudge cake so you want to soft and moist in the centre.

Allow cake to cool in tin.
