3 whole oranges
7 large eggs
2 tsp baking powder
375g almond meal
250g caster sugar
1 tsp orange blossom water
Boil the oranges for 2 hours, changing the water 3 time during this process. This removes the bitterness from the oranges.
Strain oranges and discard the water. Once cool cut oranges in half and remove seeds.
Puree the whole oranges in blender add eggs, sugar and baking powder. (I like to get the mixture smooth and aerated.)
Stir in almond meal and orange blossom water.
Pour mixture into a prepared 20cm cake tin.
Bake in a preheated oven 160°C for approximately 1 hour or until cook through.
