½ cup unsalted butter, room temperature
½ cup firmly packed light brown sugar
½ cup granulated sugar
1 large egg
1 teaspoon vanilla paste
1 ½ cups plain flour
1 teaspoon baking soda
½ teaspoon flaked sea salt
2 cups semi-sweet chocolate roughly chopped.
Preheat oven to 150◦C.
Place the butter, sugars, and vanilla in the bowl of an electric mixer and whisk together until light and fluffy.
Add the egg and mix well. Slowly add the flour, baking powder and salt and mix until a smooth dough is formed.
Fold through semi sweet chocolate pieces.
Place cookie dough along the edge of a piece of baking paper and roll into a tight log.
Place into refrigerator until firm. Cut into 1cm slices and place on prepared baking trays lined with non-stick baking paper.
Bake for 10 minutes or until golden and firm.
Allow to cool on the trays.
